  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 medium apples (peeled and diced)
  • 1/3 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 9 x 4-inch loaf pan with parchment paper.
  2. In a bowl, combine flour, baking powder, baking soda, salt, and cinnamon; set aside.
  3. In another bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time followed by vanilla.
  4. Gradually mix in the dry ingredients alternately with buttermilk until just combined.
  5. Toss diced apples with brown sugar and cinnamon; layer half into the batter before adding the remaining batter and apple mixture on top.
  6. Bake for 55-65 minutes until golden brown and a toothpick inserted comes out clean.
  7. Cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
