  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 medium apples, peeled, cored, and diced

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in vanilla extract.
  4. Gradually incorporate the dry mixture into the creamed mixture alternately with sour cream until just combined. Fold in diced apples.
  5. Pour half of the batter into the prepared pan; sprinkle with half of the cinnamon sugar mixture (made from mixing granulated sugar and ground cinnamon). Add remaining batter on top and finish with the rest of the cinnamon sugar.
  6. Bake for 50-60 minutes or until a toothpick comes out clean. Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
