Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
  2. In a bowl, toss diced apples with cinnamon and a sprinkle of sugar.
  3. Whisk together flour, brown sugar, baking powder, cinnamon, and salt in another bowl.
  4. In a separate bowl, mix eggs, milk, and melted butter until smooth.
  5. Combine wet ingredients with dry ingredients gently; fold in spiced apples.
  6. Fill muffin cups about three-quarters full with batter.
  7. Bake for 20-25 minutes until golden brown; check doneness with a toothpick.
