  • 2 1/2 cups whole milk
  • 1 large piece lemon peel (including pith)
  • 1 large piece orange peel (including pith)
  • 1 cinnamon stick
  • 5 large egg yolks
  • 1/2 cup white sugar (preferably caster)
  • Additional sugar (for caramelization)
  • Fresh fruit or berries (optional for decoration)

Instructions

  1. Heat the milk in a heavy-based saucepan with citrus peels and cinnamon stick until simmering; then remove from heat.
  2. Create a cornstarch slurry by dissolving cornstarch in water.
  3. In a bowl, whisk egg yolks and sugar until pale; then mix in the cornstarch slurry and a splash of hot milk to temper the eggs.
  4. Remove citrus peels from the milk, then slowly add the egg mixture while whisking to prevent scrambling.
  5. Return to low heat, whisking continuously until thickened to pudding consistency.
  6. Divide into ramekins, cover with plastic wrap, and chill for at least 4 hours or overnight.
  7. Before serving, sprinkle sugar on top of each custard and caramelize using a blowtorch or under the oven grill until golden brown.
  8. Serve topped with fresh fruit if desired.
