  • 6 dried guajillo chiles
  • 4 dried ancho chiles
  • 1 large white onion
  • 6 garlic cloves
  • 16 corn tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded Oaxaca or Monterey Jack cheese
  • Fresh cilantro for garnish

Instructions

  1. Prepare the chiles: Toast guajillo and ancho chiles until fragrant, then soak in hot water.
  2. Blend the sauce: Combine softened chiles, garlic, onion, spices, and beef broth in a blender until smooth.
  3. Cook the meat: Sear seasoned beef in a Dutch oven, cover with chile sauce and broth, simmer for 2.5 to 3 hours until tender.
  4. Shred the beef: Remove meat from pot and shred using forks; strain broth.
  5. Assemble enchiladas: Fill warmed tortillas with shredded beef, roll tightly, and place seam-side down in a baking dish.
  6. Add sauce and cheese: Pour enchilada sauce over rolled tortillas and sprinkle cheese on top.
  7. Bake: Preheat oven to 375°F and bake for about 15–20 minutes until cheese is melted.
  8. Garnish and serve: Top with crumbled Cotija cheese and fresh cilantro before enjoying.
