  • 1/2 cup granulated sugar
  • 2 large eggs
  • 10 tablespoons unsalted butter
  • 2/3 cup + 1/4 cup semi-sweet chocolate chips
  • 1/4 cup unsweetened Dutch cocoa powder
  • 2/3 cup + 1 tablespoon all-purpose flour
  • 1/2 teaspoon fine sea salt
  • 4-5 Biscoff cookies (for the top)
  • Extra cookie butter (for the top)

Instructions

  1. Preheat your oven to 350°F (180°C). Line an 8×8 baking pan with parchment paper.
  2. In a mixing bowl, whisk together sugars, eggs, and vanilla extract until well combined.
  3. Melt butter and chocolate chips together until smooth; whisk in cocoa powder. Combine this mix with the egg mixture.
  4. Gently fold in flour and salt until just combined.
  5. Pour half of the brownie batter into the prepared pan. Place chilled cookie butter layer on top and spread remaining batter over it.
  6. Press broken Biscoff cookies onto the top and drizzle with warmed cookie butter.
  7. Bake for 30-40 minutes until a toothpick comes out with moist crumbs attached. Cool completely before cutting into squares.
