  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 3/4 cup unsalted butter, cold and cut in pieces
  • 1/4 cup shortening (butter flavor Crisco)
  • 1/4 cup ice water
  • 12 ounces fresh blackberries
  • 1/2 cup sugar
  • 2 tsp Instant Clearjel thickener (or substitute 1 Tbsp cornstarch)
  • juice of 1/2 lemon
  • 1 cup confectioner’s sugar, sifted
  • water for thinning

Instructions

  1. Pulse the flour and salt together in a food processor until combined.
  2. Add the cold butter and shortening; pulse about 20 times until grainy.
  3. Gradually add ice water while pulsing until the dough comes together when pinched.
  4. Turn out the dough onto a floured surface. Form it into a ball, kneading in any dry flour as needed.
  5. Cut the dough in half, form two rectangles, wrap each in plastic, and refrigerate for at least 2 hours or overnight.
  6. While chilling, prepare your filling by placing blackberries in a saucepan over low heat.
  7. Mix sugar with Clearjel thickener; add to pan along with lemon juice.
  8. Cook on medium-high heat until berries soften and sugar dissolves—about 8 minutes—stirring frequently to mash most berries.
  9. Chill filling until ready for use.
  10. Preheat your oven to 350°F (175°C).
  11. Lay out parchment on a baking sheet and lightly flour it.
  12. Roll out one piece of chilled dough into a rectangle (approximately 9×13 inches).
  13. Spoon cooled berry filling over it, leaving an inch border around edges.
  14. Roll out second piece of dough to cover filling.
  15. Carefully place it over jam filling; press edges to seal, trimming excess if needed.
  16. Brush with egg wash and bake for approximately 40 minutes until golden brown.
  17. Let cool completely before glazing.
  18. To make glaze, whisk confectioner's sugar with enough water to achieve desired consistency.
  19. Brush glaze generously over cooled blackberry pie bars before slicing.
