  • 1 tbsp corn syrup

  2. Blend chopped carrots, eggs, and vegetable oil until smooth.
  3. Add sugar to the blender and pulse gently to combine.
  4. In a mixing bowl, whisk together flour, baking powder, and salt.
  5. Pour the carrot mixture into the dry ingredients and stir until just combined.
  6. Pour the batter into the prepared pan and bake for 30–40 minutes or until a toothpick comes out clean.
  7. Allow cooling for 15 minutes before glazing.
  8. For the glaze, melt chocolate chips, butter, and corn syrup over a double boiler; add milk for desired consistency.
  9. Pour glaze over the cooled cake before slicing and serving.
