  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • 3/4 tsp fine sea salt
  • 1/2 cup water
  • 1 tbsp apple cider vinegar
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries, hulled and quartered
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest

Instructions

  1. Prepare the brown butter by melting cold unsalted butter in a saucepan over medium heat until golden brown and nutty.
  2. In a mixing bowl, whisk together flour and sea salt. Add the cooled brown butter, water, and vinegar; mix until combined. Form into a ball and refrigerate for at least one hour.
  3. For the filling, combine sliced peaches and strawberries with sugar, cornstarch, lemon juice, lemon zest, and salt in another bowl.
  4. Preheat the oven to 375°F (190°C). Roll out half of the dough to fit your pie dish. Fill with fruit mixture and cover with remaining dough; seal edges.
  5. Brush top crust with whisked egg and sprinkle with Turbinado sugar if desired.
  6. Bake on a baking sheet for about 70 minutes or until golden brown and bubbly.
