  • 1/2 cup unsalted butter (for toffee)
  • 1/2 cup light brown sugar (packed)
  • 1 cup unsalted butter (for cookie dough)
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup light brown sugar (packed for cookie dough)
  • 1/3 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 6 ounces semisweet chocolate chips

Instructions

  1. Preheat the oven to 425°F. Line a baking dish with parchment paper and lay out saltine crackers in an even layer.
  2. In a saucepan, melt unsalted butter and brown sugar over medium heat until bubbly; pour over crackers and bake for about 5 minutes.
  3. Remove from oven, sprinkle chocolate chips on top, allow to melt, then spread evenly.
  4. For the cookie dough, brown the remaining unsalted butter in a saucepan until golden, then mix with sugars, eggs, and vanilla.
