  • 1 1/4 cup all-purpose flour
  • 1 cup bread flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 3 1/2 to 4 oz cubed fresh mozzarella cheese
  • 2 tbsp chopped fresh basil
  • 1/3 cup chopped sun-dried tomatoes
  • 2 eggs
  • 2 1/2 tbsp grape-seed oil (can use extra virgin olive oil)
  • 1 1/4 cups buttermilk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×4 inch bread pan.
  2. In a large mixing bowl, combine the all-purpose flour, bread flour, baking powder, baking soda, and salt. Mix well until evenly distributed.
  3. Add the chopped basil, cubed mozzarella cheese, and sun-dried tomatoes into the flour mixture. Stir until everything is incorporated.
  4. In a separate bowl, whisk together the eggs, grape-seed oil (or olive oil), and buttermilk until smooth.
  5. Pour the wet mixture into the dry ingredients. Using a wooden spoon, mix gently until all components are well combined. Remember that the dough will be sticky.
  6. Carefully transfer the dough into your prepared bread pan. Spread it evenly to ensure even baking.
  7. Place the pan in the preheated oven and bake for about 40-45 minutes. To check for doneness, insert a toothpick into the center; if it comes out clean or with few crumbs attached, it’s ready!
