  • 2 tablespoons butter
  • 1 white onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 cans (400g each) white beans, drained
  • 1 tablespoon balsamic vinegar
  • 2 sprigs rosemary, diced
  • 3 tablespoons lighter crème fraîche
  • Salt and black pepper to taste
  • Extra virgin olive oil (EVOO)

Instructions

  1. In a casserole dish, heat butter over low heat. Add sliced onions and cook for 30-45 minutes until golden brown. Stir frequently.
  2. Add balsamic vinegar and cook an additional 10 minutes.
  3. Add minced garlic and diced rosemary; cook for another minute.
  4. Stir in white beans and crush some with the back of a spoon to thicken the sauce.
  5. Mix in crème fraîche and water until creamy.
  6. Season with salt and pepper; add grated Pecorino cheese if desired.
  7. Serve warm atop crusty bread or alongside mashed potatoes.
