  • 1 Tbsp butter or olive oil
  • 1 medium onion, diced
  • 1 garlic clove, minced
  • 1 celery stick, chopped
  • 1 lb carrots, peeled and diced
  • 1 lb potatoes, peeled and diced
  • 2 ½ cups low-sodium vegetable broth
  • 1 tsp Italian herbs
  • ¼ tsp dried thyme
  • ¼ tsp dried parsley (optional)
  • ⅛ tsp black pepper
  • ½ tsp fine salt
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, melt the butter or olive oil. Sauté the onion with a pinch of salt for about 5 minutes until soft. Add garlic and cook until fragrant.
  2. Stir in the chopped celery, carrots, potatoes, herbs, salt, and pepper. Cook for another 2-3 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer covered for 20 minutes.
  4. Allow to cool slightly before blending half of the soup until smooth; return blended portion to pot and mix well.
  5. Serve hot with extra black pepper and parsley on top.
