  • 12 ounces jumbo pasta shells
  • 1 pound fresh spicy sausage (or turkey/chicken sausage, casing removed)
  • 1 cup chopped broccolini
  • 16 ounces pumpkin puree
  • 1/4 cup water
  • 1/4 cup whole milk ricotta cheese
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup Cabot Mac ‘n Cheese shredded cheese (plus more for topping)
  • 1/2 cup freshly shredded Cabot Seriously Sharp cheddar cheese (plus more for topping)
  • 4 sage leaves (roughly chopped)
  • Salt and pepper (to taste)

Instructions

  1. Preheat oven to 375°F (191°C).
  2. Cook jumbo pasta shells in boiling water for 7 minutes until al dente. Transfer to ice bath to cool.
  3. In a skillet, brown the spicy Turkey sausage over medium-high heat, breaking it into smaller pieces. Add broccolini and cook until softened.
  4. In the same skillet, mix pumpkin puree, water, ricotta cheese, and nutmeg; stir until bubbly. Add shredded cheeses and sage leaves until melted.
  5. Spread some pumpkin sauce in a casserole dish. Mix remaining sauce with the Turkey sausage mixture and stuff each shell.
  6. Place stuffed shells in the dish, pour leftover sauce on top, sprinkle with extra cheese, and bake for 15-20 minutes until golden.
