  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup almond extract mixed with water
  • 1 teaspoon vanilla extract
  • 1/2 cup cherry juice
  • 1 cup fresh cherries, pitted and chopped
  • 1/4 cup granulated sugar
  • 2 tablespoons cherry preserves
  • 1 package ladyfingers
  • 1/4 cup cocoa powder
  • 1/4 cup dark chocolate, shaved or grated

Instructions

  1. In a mixing bowl, combine mascarpone cheese and heavy cream. Beat until smooth and fluffy.
  2. Add almond extract mixture, cherry juice, and vanilla extract. Mix until combined.
  3. In another bowl, blend granulated sugar and cherry preserves; fold into the mascarpone mixture along with the chopped cherries.
  4. Dip ladyfingers in a mixture of cherry juice (and almond extract) quickly to avoid sogginess.
  5. Layer dipped ladyfingers in a baking dish; spread half the mascarpone mixture over them.
  6. Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone mixture.
  7. Cover and refrigerate for at least 4 hours or overnight before serving. Dust with cocoa powder and top with chocolate shavings before serving.
