  • 6 day-old croissants
  • 9 ounces dark chocolate (chopped)
  • 1/4 cup sliced almonds
  • 1/2 cup salted butter (softened)
  • 1/2 cup granulated sugar
  • 1 1/2 cups almond flour
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • Powdered sugar (for dusting)

Instructions

  1. Prepare the filling by heating sugar and water until dissolved. Remove from heat, add almond extract, and let cool.
  2. In a mixing bowl, cream softened butter and granulated sugar until light and fluffy. Mix in almond flour, egg, vanilla extract, and remaining almond extract until combined. Stir in whole milk until smooth.
  3. Preheat the oven to 375°F (190°C). Slice each croissant in half lengthwise and spread the filling inside. Add chopped dark chocolate and sliced almonds before closing.
  4. Place on a baking sheet lined with parchment paper, brush tops with remaining filling mixture, and bake for about 15 minutes or until golden brown.
  5. Dust with powdered sugar before serving.
