  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup light brown sugar
  • 1 large egg (room temperature)
  • 1 cup mashed bananas (about 2 medium)
  • 2 teaspoons vanilla extract
  • ¾ cup mini chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (177°C). Line an 8×8 inch baking pan with parchment paper.
  2. Melt the butter in a microwave-safe bowl, then let it cool for about 10–15 minutes.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, mix cooled butter and brown sugar until combined. Add the egg, mashed bananas, and vanilla; whisk until smooth.
  5. Gradually stir dry ingredients into wet mixture until just combined. Fold in most of the mini chocolate chips.
  6. Spread batter into the prepared pan and sprinkle remaining chocolate chips on top.
  7. Bake for 30–35 minutes or until edges are firm and a toothpick comes out clean.
  8. Allow to cool in the pan, then lift out using parchment paper edges, slice into squares, and enjoy!
