Chocolate Pumpkin Butter Cups are a scrumptious treat that combines the creamy richness of pumpkin spice filling with the indulgent taste of dark chocolate. Perfect for fall festivities or an everyday snack, these delightful cups are not only easy to make but also lower in sugar and completely dairy-free.

  • 1/2 Cup Pumpkin Puree
  • 1/3 Cup Almond Butter (or any nut butter)
  • 2 Tablespoons Honey (or maple syrup)
  • 2 Teaspoons Pumpkin Spice
  • 1 Cup Chocolate Chips
  • 1 Tablespoon Coconut Oil

Instructions

  1. Line a muffin tin with silicone muffin cups or cupcake liners.
  2. In a mixing bowl, combine pumpkin puree, almond butter, honey, and pumpkin spice. Mix until smooth.
  3. In a microwave-safe bowl, combine chocolate chips and coconut oil. Melt in short bursts, stirring until smooth.
  4. Pour a small amount of melted chocolate into each cup for the base layer.
  5. Add about one tablespoon of the pumpkin filling on top of the chocolate layer and cover with more melted chocolate.
  6. Refrigerate for at least two hours until firm, then enjoy!
