  • 1/4 cup olive oil
  • 1/4 cup chopped fresh cilantro
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup red onion, diced
  • Extra cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Make the marinade by whisking together lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper in a medium bowl.
  2. Marinate the flank steak in the marinade for at least 30 minutes (ideally 2–4 hours) in a resealable plastic bag or shallow dish.
  3. Cook the rice according to package instructions while warming black beans in a small saucepan and preparing corn.
  4. Preheat the grill or grill pan over medium-high heat.
  5. Grill the marinated flank steak for about 4–5 minutes on each side until medium-rare (internal temperature of 130°F).
  6. Allow the steak to rest for 5–10 minutes before slicing against the grain.
  7. Assemble bowls with rice as the base topped with black beans, corn, sliced steak, cherry tomatoes, avocado slices, and red onion.
