  • 4 tablespoons melted vegan butter
  • ¾ cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 tablespoons cinnamon (for swirl and frosting)
  • ¼ teaspoon salt
  • 1 ½ cups all-purpose flour (regular or gluten-free)
  • 1 cup old-fashioned rolled oats
  • ⅓ cup light brown sugar (for cinnamon swirl)
  • ¾ cup powdered sugar (for frosting)
  • 2 oz softened vegan cream cheese (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract.
  3. In another bowl, combine baking powder, baking soda, cinnamon, salt, flour, and oats. Stir into the wet mixture until combined.
  4. Pour half of the batter into the loaf pan. Mix melted vegan butter, brown sugar, and cinnamon for the swirl; spread half over the batter.
  5. Add remaining batter on top and swirl with remaining cinnamon mixture.
  6. Bake for 50-60 minutes until a toothpick comes out clean.
  7. Cool before topping with frosting made from powdered sugar, melted vegan butter, and softened vegan cream cheese.
