  • 1/2 cup dark brown sugar
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. In a small pot, simmer chopped Medjool dates with water over low heat for about five minutes until softened. Mash into a smooth consistency.
  3. In a mixing bowl, cream together softened butter and dark brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Gradually add flour and baking powder; mix until just combined. Fold in the mashed date mixture gently.
  5. Pour the batter into the prepared dish and bake for approximately 35 minutes or until golden brown on top.
  6. While baking, prepare the toffee sauce by heating heavy cream, dark brown sugar, butter, and vanilla in a small pot over low heat until melted and bubbling gently.
  7. Once baked, allow the pudding to cool slightly before serving warm with the toffee sauce drizzled generously over it.
