  • 1/4 cup dark cocoa powder
  • 1 cup granulated sugar
  • 2 tablespoons instant espresso powder
  • 2 large eggs
  • 3/4 cup all-purpose flour
  • For frosting: 3 tablespoons heavy whipping cream
  • 1/4 cup unsalted butter
  • powdered sugar
  • For topping: 1/2 cup dark chocolate chips
  • 2 tablespoons heavy whipping cream

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch pan with foil and spray with nonstick baking spray.
  2. In a bowl, whisk melted butter and cocoa until smooth.
  3. In another bowl, beat sugar, eggs, espresso powder, and vanilla until fluffy; fold in the cocoa mixture.
  4. Combine flour, salt, and baking powder; gently mix into wet ingredients until just combined.
  5. Spread batter in the prepared pan; bake for 25-28 minutes until toothpick comes out slightly sticky.
  6. Let cool completely before frosting.
  7. Prepare frosting by mixing cream and espresso granules; beat with softened butter and powdered sugar until fluffy.
  8. Frost cooled brownies; melt chocolate chips with cream in the microwave and drizzle over the top.
  9. Allow to set before cutting into squares.
