  • ½ cup fresh orange juice
  • Zest of one orange
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • ¼ cup unsalted butter (softened)
  • 1 and ½ cups crushed gingersnap cookies
  • ⅓ cup brown sugar
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Combine crushed gingersnap cookies, brown sugar, cinnamon, and ginger in a bowl. Stir in melted butter and press into a tart pan.
  2. Bake for about 10 minutes; remove and let cool.
  3. In a saucepan over medium heat, combine cranberries, orange juice, zest, sugar, and salt. Cook until cranberries burst; blend until smooth.
  4. Whisk together eggs and yolks; gradually add cranberry puree while whisking. Return mixture to heat and stir in softened butter until melted.
  5. Pour curd into the cooled crust. Chill for at least four hours before serving.
