  • 12-16 ounces short cut pasta (like penne)
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning (divided)
  • 1 medium yellow onion (diced)
  • 2 bell peppers (diced)
  • Pinch red pepper flakes (to taste)
  • 2 cloves garlic (minced)
  • 1 ¼ cups chicken broth
  • ½ cup heavy cream or full-fat coconut milk
  • 2 tablespoons tomato paste
  • ½ cup grated parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package directions until al dente. Reserve a cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium-high heat. Add sliced Beef sausage and cook until crispy, about 5 minutes. Remove and set aside.
  3. In the same skillet, lower the heat to medium and sauté onion and bell peppers with remaining Cajun seasoning and red pepper flakes until softened, about 3 minutes. Add garlic and cook for an additional minute.
  4. Whisk in chicken broth, heavy cream, and tomato paste. Bring to a gentle boil then simmer for 5-7 minutes to thicken.
  5. Stir in parmesan cheese until melted, then add cooked pasta and Beef sausage back into the skillet. Toss to combine, adding reserved pasta water as needed to reach desired consistency.
  6. Serve hot, garnished with extra parmesan cheese and parsley.
