  • 1 lb boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 12 oz rotini or fusilli pasta
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain, reserving some pasta water.
  2. In a skillet, heat olive oil and butter over medium-high heat. Sear the chicken pieces seasoned with spices until golden brown. Remove from skillet.
  3. In the same skillet, melt more butter and sauté minced garlic until fragrant. Stir in heavy cream and milk; bring to a simmer before adding cheeses until melted and smooth.
  4. Combine cooked pasta with the sauce, then add the chicken back into the mix.
  5. Serve hot, garnished with chopped parsley if desired.
