  • 16 ounces cool whip or homemade whipped cream
  • 2 cups raspberries (fresh or frozen)
  • 2 tablespoons cornstarch
  • 1/2 cup water
  • 1 teaspoon lemon juice (optional)

Instructions

  1. In a mixing bowl, combine crushed graham cracker crumbs and sugar. Pour in melted butter and mix until combined. Press into a 9-inch springform pan.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add confectioners' sugar, milk, and vanilla, mixing until creamy. Fold in cool whip.
  3. Spread the cream cheese filling over the crust evenly. Cover and refrigerate for at least six hours or overnight.
  4. To prepare the raspberry topping, heat raspberries, water, sugar, and cornstarch in a saucepan until thickened. Let it cool before pouring over the cheesecake.
  5. Carefully remove from the springform pan, slice, serve chilled, and garnish with additional raspberries if desired.
