  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Halve the spaghetti squash lengthwise, scoop out seeds, drizzle with olive oil, and season with salt and pepper.
  3. Place cut-side down on a baking sheet and roast for 30–35 minutes until tender.
  4. In a skillet over medium heat, sauté onion in olive oil until translucent. Add garlic and mushrooms; cook until browned. Stir in spinach until wilted.
  5. In a bowl, mix cream cheese, Parmesan, nutmeg, and the vegetable mixture; season to taste.
  6. Scrape cooked squash into strands; mix with filling.
  7. Spoon mixture back into squash halves and top with mozzarella cheese.
  8. Bake for another 10–15 minutes until cheese is melted.
