Instructions

  1. Melt butter in a Dutch oven over medium heat until bubbling.
  2. Add diced onion and minced garlic; cook until onion is softened (about 7-10 minutes).
  3. Stir in diced carrots and cook for another 5 minutes.
  4. Add diced potatoes and pour in vegetable broth; bring to a boil, then simmer until potatoes are tender.
  5. In a bowl, mix milk with flour until smooth; stir into the soup.
  6. Add broccoli florets; simmer for an additional 10-15 minutes.
  7. Stir in grated cheese until melted; adjust seasoning with salt.
