Ingredients

For the Chicken
2 boneless, skinless chicken breasts
1 cup buttermilk
1 cup all-purpose flour
1 cup panko breadcrumbs
1 tablespoon garlic powder
1 teaspoon paprika
Salt and black pepper, to taste
Olive oil, for frying

For the Sandwich Assembly
4 slices ciabatta or brioche bread
1 cup romaine lettuce, chopped
1/2 cup grated Parmesan cheese
1/2 cup Caesar dressing

Instructions

  • Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness.
  • Season the chicken with salt, pepper, garlic powder, and paprika.
  • Pour the buttermilk into a bowl and submerge the chicken. Let marinate for at least 20–30 minutes (or up to 4 hours refrigerated).
  • In a shallow dish, combine the flour and panko breadcrumbs.
  • Remove the chicken from the buttermilk, allowing excess to drip off, then dredge thoroughly in the flour-panko mixture, pressing gently to adhere.
  • Heat about 1/4 inch of olive oil in a large skillet over medium heat.
  • Fry the chicken for 4–5 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F / 74°C). Transfer to a paper towel-lined plate to drain.
  • Lightly toast the bread slices in a skillet or oven until golden.
  • In a bowl, toss the chopped romaine with Caesar dressing and grated Parmesan.
  • Assemble the sandwiches by placing a piece of crispy chicken on the bottom slice of bread. Top with the dressed romaine mixture and additional Parmesan if desired. Finish with the top slice of bread and serve immediately.
