  • 16 corn tortillas (6-inch)
  • 1/4 cup vegetable oil
  • 2 cups refried beans, warmed (16-ounce can)
  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 2 cups enchilada sauce
  • 8 ounces cheddar cheese, shredded
  • Diced tomatoes
  • Sliced black olives
  • Green onions
  • Hot sauce
  • Salt to taste

Instructions

  1. Heat vegetable oil in a frying pan over medium heat. Fry tortillas one at a time for 2–3 minutes on each side until golden brown and crispy. Drain on paper towels and lightly season with salt.
  2. Preheat the oven to 350°F (175°C).
  3. In another pan, cook ground beef in heated oil for 6–7 minutes until browned. Add taco seasoning and water; simmer for about 10 minutes.
  4. On a baking sheet, layer half of the crispy tortillas, then top each with enchilada sauce, refried beans, and seasoned beef. Place another tortilla on top of each stack.
  5. Add more enchilada sauce and sprinkle with cheese.
  6. Bake for about 10 minutes until cheese is melted and bubbly. Serve with desired toppings.
