  • Sichuan peppercorns
  • Coriander seeds
  • Tender lamb (loin or shoulder), thinly sliced
  • Apple vinegar (or dry apple juice)
  • Peanut oil (or vegetable oil)
  • Chili oil
  • Chinkiang vinegar
  • Light and dark soy sauce
  • Fresh garlic
  • Ginger
  • Red onion
  • Hot green chili
  • Cilantro for garnish

Instructions

  1. Prepare your homemade noodles and set water to boil.
  2. Toast the cumin seeds, Sichuan peppercorns, and coriander seeds in a dry pan until fragrant.
