  • 1 cup cake flour
  • 3/4 cup vegetable oil
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 2 large eggs
  • 1/2 cup chopped walnuts
  • 1 teaspoon baking powder
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon salt
  • Pinch nutmeg

Instructions

  1. Preheat your oven to 325°F (160°C). Soak the whole dates in very hot water.
  2. In a mixing bowl, sift together cake flour, baking powder, cinnamon, salt, and nutmeg.
  3. In another bowl, whisk together vegetable oil, brown sugar, honey, eggs, and vanilla until smooth.
  4. Combine wet and dry ingredients until just mixed; fold in chopped walnuts and drained dates.
  5. Grease a loaf pan with nonstick cooking spray and pour in the batter.
  6. Bake for 50-60 minutes or until a toothpick comes out clean. Cool before slicing.
