  • ¼ cup lemon juice

  • 6 Tbsp unsalted butter

  1. In a saucepan, combine sugar, salt, and orange zest until it resembles wet sand.
  2. Add egg yolks, orange juice, and lemon juice; whisk until blended.
  3. Cook on low-medium heat while stirring continuously for about 10-15 minutes until thickened.
  4. Stir in the rosemary and continue cooking for another 5 minutes.
  5. Strain through a fine-mesh sieve into a bowl containing butter; whisk until melted.
  6. Allow to cool and chill in the refrigerator for at least an hour before serving.
