  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 cup unsalted butter (melted)
  • 16 oz cream cheese (room temperature)
  • 1/2 cup sour cream
  • 3 large eggs (room temperature)
  • 1/4 cup cornstarch
  • 5 medium apples (peeled, cored, and chopped)
  • 1/4 cup brown sugar
  • 1/2 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 cup rolled oats
  • 1/2 cup flour

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, granulated sugar, cinnamon, and melted butter. Press into the bottom of a 9-inch springform pan.
  3. In another bowl, beat cream cheese until smooth. Add sour cream and mix well. Incorporate eggs one at a time, followed by cornstarch.
  4. Pour half of the cheesecake mixture over the crust. Layer with half of the apples mixed with brown sugar, nutmeg, and lemon juice. Repeat with remaining filling and apples.
  5. Bake for about 60 minutes until set but slightly jiggly in the center.
  6. Allow to cool in the oven for an hour before refrigerating for at least four hours or overnight.
  7. Mix rolled oats with flour for crumble topping and sprinkle on top before serving.
