Ingredients

  • 1 cup cooked quinoa
  • 1 cup grated zucchini
  • 1 cup grated carrot
  • 1 can chickpeas (lightly mashed)
  • 1 cup bell pepper (diced)
  • 2 green onions (finely chopped)
  • 2 tbsp soy sauce
  • 1 cup breadcrumbs
  • 1 large egg (or flax egg)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • to taste salt and pepper
  • 2 tbsp olive oil

Instructions

  1. Gather all ingredients and cook quinoa if not already prepared. Grate zucchini and carrot, squeezing out excess moisture from the zucchini.
  2. In a mixing bowl, combine cooked quinoa, grated zucchini, grated carrot, mashed chickpeas, diced bell pepper, and chopped green onions.
  3. Add breadcrumbs, soy sauce, garlic powder, onion powder, ground cumin, smoked paprika, salt, and pepper. If using an egg instead of a flax egg, mix it in now.
  4. Shape the mixture into patties about ½ inch thick and place them on a baking sheet lined with parchment paper.
  5. For baking: Preheat oven to 375°F (190°C). Brush patties with olive oil and bake for about 20 minutes until golden brown.
  6. For frying: Heat olive oil in a frying pan over medium heat and cook each patty for about 5 minutes per side until crispy.
