  • 1 ⅓ cups milk (preferably 2%)
  • 1 cup heavy cream (or whipping cream)
  • 2 tablespoons loose-leaf Earl Grey tea (or 2 teabags)
  • 1 whole vanilla bean
  • 5 large egg yolks
  • ⅓ cup granulated sugar
  • ⅛ teaspoon sea salt
  • 4 tablespoons granulated sugar (for topping)

Instructions

  1. Infuse the milk: In a medium saucepan, combine split and scraped vanilla bean, tea leaves, and milk. Heat until boiling; remove from heat and steep for 10 minutes before straining.
  2. Preheat the oven to 160°C (320°F) and boil water for the water bath.
  3. Whisk together egg yolks, granulated sugar, and sea salt in a large bowl until smooth. Slowly add the infused milk and cream mixture; stir gently.
  4. Distribute the mixture into ramekins placed in a baking tray and pour boiling water into the tray until halfway up the sides.
  5. Bake for 25-30 minutes until set with a slight jiggle in the center.
  6. Cool at room temperature before refrigerating for at least three hours or overnight.
  7. Just before serving, sprinkle sugar on top of each ramekin and caramelize using a kitchen torch or broiler.
