4 large flour tortillas
2 cups cooked chicken (shredded)
8 slices turkey bacon (cooked and crumbled)
2 cups Mexican cheese blend (shredded)
1/2 cup ranch dressing
1 cup tomatoes (diced)
1/4 cup red onion (finely chopped)
2 tablespoons fresh cilantro (chopped)
2 tablespoons butter (for cooking)
Instructions
In a bowl, mix the shredded chicken with ranch dressing until well-coated. Add crumbled turkey bacon, diced tomatoes, chopped red onion, and cilantro; stir to combine.
On one half of each tortilla, layer shredded cheese. Spoon the chicken mixture over the cheese and top with more cheese before folding the tortilla.
Heat butter in a non-stick skillet over medium heat. Cook one folded quesadilla for about 2–3 minutes until golden brown; flip carefully and cook for another 2–3 minutes.
