  • 8 oz semisweet chocolate
  • 2 cups heavy whipping cream
  • 1 tbsp powdered sugar

  • 6 oz bittersweet chocolate
  • ¾ cup heavy cream (for ganache)
  • 1 tbsp light corn syrup
  • 1 tbsp butter

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your pans.
  2. In one bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix eggs with vegetable oil, then add buttermilk and hot coffee.
  4. Combine wet and dry ingredients until smooth.
  5. Divide the batter between pans and bake for 25–30 minutes.
  6. Cool completely before preparing the mousse by folding melted semisweet chocolate into whipped cream mixed with powdered sugar and vanilla.
  7. Layer the cake with mousse in a springform pan; refrigerate for at least three hours.
  8. For the ganache topping, heat cream and pour over chopped bittersweet chocolate; stir until smooth before spreading over the chilled cake.
