  • 2 cups organic powdered sugar
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 2 1/2 cups all-purpose flour
  • 12 tbsp dairy-free milk
  • Food coloring (vegan)

Instructions

  1. 1. Measure all ingredients except food coloring.
  2. 2. In a large bowl, cream the vegan butter until fluffy. Add powdered sugar, vanilla extract, baking powder, and sea salt. Mix until smooth.
  3. 3. Gradually add flour and one tablespoon of dairy-free milk; mix well.
  4. 4. Divide dough: Color one quarter orange for pumpkins and another eighth green.
  5. 5. Chill colored doughs for at least two hours.
  6. 6. Shape logs from the colored doughs and cut out pumpkin shapes.
  7. 7. Wrap in vanilla dough and chill again for about 30 minutes.
  8. 8. Preheat the oven to 375°F (190°C) and bake sliced cookies for 12-14 minutes.
