  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 1/2 cups fresh strawberries (hulled and chopped)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In a large bowl, beat the softened butter and sugar together until light and fluffy (about 2–3 minutes).
  4. Add the eggs one at a time, mixing well after each addition; then stir in the vanilla extract.
  5. Gradually add the dry ingredients alternately with the sour cream to the wet mixture until just combined.
  6. Fold in the chopped strawberries gently until evenly distributed.
  7. Pour the batter into the prepared loaf pan and spread evenly.
  8. Bake for 60–65 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
