  • 4 large bell peppers
  • 1 lb lean ground turkey
  • 1 medium onion, chopped
  • 1 cup canned black beans
  • 2 cups tomato salsa
  • 1 cup cooked brown rice
  • 1 cup shredded cheese (Mexican blend or sharp cheddar)

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a baking dish with olive oil.
  2. Halve the bell peppers lengthwise, remove seeds, and place in the baking dish. Brush with olive oil and season with salt and pepper. Bake for 15 minutes.
  3. In a skillet, heat olive oil over medium-high heat. Cook ground turkey until browned (about 5 minutes). Stir in onions, garlic, taco seasoning, corn, and black beans; cook for another minute.
  4. Add salsa and brown rice; simmer for 2 minutes before removing from heat.
  5. Stuff the baked peppers with the mixture, top with cheese, and bake for an additional 15 minutes until cheese is melted.
