  • 1 medium Onion (diced)
  • 1/2 Red bell pepper (diced)
  • 1 medium Potato (diced)
  • 4 cloves Garlic (minced)
  • 1 28-ounce can Crushed tomatoes
  • 1/2 tsp each Salt, Pepper, Sugar (adjust to taste)
  • 1/2 tsp each Paprika, Cumin
  • 5-6 Eggs (preferably at room temperature)
  • Fresh Cilantro or Parsley (for garnish)
  • Sliced Avocado and/or Cheese (Feta, Parmesan, Mozzarella, optional garnish)
  • Toasted bread for serving

Instructions

  1. Heat vegetable oil in a skillet over medium heat. Sauté diced onion, bell pepper, and potato for 4-5 minutes until tender.
  2. Stir in minced garlic and cook until fragrant (about 1 minute), then add crushed tomatoes, salt, black pepper, sugar, paprika, and cumin. Mix well.
  3. Reduce heat to low, cover the skillet, and let the sauce simmer for 3-4 minutes.
  4. Create small wells in the sauce and crack eggs into each well; season with salt and pepper.
  5. Cover again and cook on low heat for 5-8 minutes until egg whites are set and yolks reach desired doneness.
  6. Garnish with fresh cilantro or parsley before serving with toasted bread.
