  • 4 pieces Chicken Thighs (or breasts)
  • 1 medium Onion (chopped)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cinnamon Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Vegetable Oil (or olive oil)
  • 1 cup Chicken Broth or Water
  • 1 cup Dried Apricots
  • 1/2 cup Slivered Almonds or Walnuts
  • 1/4 cup Fresh Parsley (chopped)

Instructions

  1. Prepare by chopping the onion and mincing the garlic. Measure out all spices.
  2. In a large skillet or Dutch oven, heat vegetable oil over medium heat. Sauté onions until translucent (~5 minutes), then add garlic for another minute.
  3. Brown chicken thighs in the skillet for about 4–5 minutes on each side until golden brown; remove temporarily.
  4. Add spices to the skillet with onions and garlic; stir well to combine.
  5. Return chicken to the skillet, pour in broth or water, and add dried apricots. Simmer gently.
  6. Cover and cook on low for about 30–35 minutes until chicken is tender.
