  • 200 grams granulated sugar
  • 200 grams almond meal
  • 100 grams shelled pistachios
  • 6 large eggs
  • 1 tsp baking powder
  • A pinch of salt

Instructions

  1. Wash the oranges and boil them in water for about 30 minutes until soft. Allow to cool.
  2. Cut the oranges in half, remove seeds, and blend into a smooth puree using a food processor.
  3. In the food processor, add sugar, almond meal, ground pistachios, baking powder, and salt; blend until combined.
  4. Whisk eggs in a large bowl until frothy; gradually mix in the orange-nut mixture until smooth.
  5. Preheat your oven to 180°C (350°F) and prepare a 9-inch round cake pan with parchment paper.
  6. Pour the batter into the pan and smooth the top.
  7. Bake for 45-50 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.
