  • 2 garlic cloves
  • 50g butter
  • 1200ml beef stock
  • 15g fresh thyme
  • 400g baguette
  • 150g Comté cheese
  • Olive oil
  • Salt
  • Black pepper

Instructions

  1. Peel and slice onions into thin rounds. In a large saucepan, heat 2 tablespoons of olive oil and a pinch of salt over medium heat. Add the onions and cook until softened and pale golden (about 30 minutes).
  2. Add finely sliced garlic and butter; cook for an additional 5 minutes until fragrant.
  3. Pour in the beef stock, scraping the pan bottom to deglaze. Add thyme leaves and simmer for another 10 minutes.
  4. Taste and adjust seasoning with salt if necessary.
  5. Slice baguette into rounds. Distribute soup into oven-proof bowls, topping each with baguette slices and grated Comté cheese.
  6. Broil under a hot grill until cheese is melted and golden brown.
