  • 1 pound shrimp, peeled and deveined
  • 6 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Prepare the plantains by peeling and cutting them into 1-inch slices. Heat olive oil in a skillet over medium heat and fry the slices until golden (about 4-5 minutes each side). Drain on paper towels.
  2. In the same skillet, add butter and sauté minced garlic until fragrant (about 1 minute). Add shrimp, season with salt, black pepper, and paprika, cooking until pink (about 3-4 minutes).
  3. Pour in chicken broth; simmer for an additional 2 minutes before stirring in lime juice and cilantro.
  4. Mash the fried plantains using a fork or potato masher in a large bowl until smooth.
  5. Shape the mashed plantains into a dome or bowl.
  6. Serve by topping the mofongo with the garlic shrimp mixture and drizzle any remaining sauce over the top.
