  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • 1/2 cup Reese’s Pieces

Instructions

  1. Prepare the cheesecake filling by mixing softened cream cheese, powdered sugar, and vanilla extract until smooth. Scoop dollops onto a parchment-lined baking sheet and freeze for at least one hour.
  2. For the cookie dough, beat together softened butter, brown sugar, and granulated sugar until light and fluffy. Add in one egg and an extra teaspoon of vanilla extract.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually combine this with the wet ingredients. Fold in chocolate chips and Reese’s Pieces.
  4. Take about two tablespoons of cookie dough, flatten it slightly, place a frozen cheesecake filling piece in the center, cover with more dough, and seal the edges.
  5. Place cookie dough balls on a parchment-lined baking sheet with space between them. Bake at 350°F (175°C) for about 12-14 minutes until golden around the edges.
