  • 1 1/2 teaspoons instant espresso
  • 2 large egg whites
  • 5 tablespoons white sugar
  • 3 large egg yolks
  • 2 large whole eggs
  • 3 tablespoons white sugar (for filling)
  • Cocoa powder (for dusting)
  • 7/8 cup chilled heavy cream
  • 3 tablespoons confectioners' sugar
  • 3/4 teaspoon vanilla extract
  • Brewed coffee or coffee syrup
  • 1/2 cup chilled mascarpone cheese

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Sift together the flour and espresso in one bowl. In another, beat egg whites until stiff peaks form; gradually add sugar until glossy.
  3. Whisk egg yolks and whole eggs with additional sugar until thick and pale. Fold in flour mixture, then gently fold in beaten egg whites.
  4. Pour batter onto the baking sheet and bake for about 8 minutes until lightly golden. Cool completely.
  5. Whip heavy cream until soft peaks form; add confectioners' sugar and vanilla, whipping until stiff peaks form. Fold in mascarpone.
  6. Spread filling over cooled cake, roll into a log using parchment for support, and dust with cocoa powder before serving.
