  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic (minced)
  • ½ small red onion (finely chopped)
  • 1 ½ cups cherry tomatoes (halved)
  • ½ cup Kalamata olives (sliced)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp salt (or to taste)
  • ¼ tsp black pepper
  • ½ cup feta cheese (crumbled)

Instructions

  1. Cook the pasta according to package instructions until al dente; reserve ½ cup pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Sauté garlic and red onion until fragrant.
  3. Add cherry tomatoes and olives; cook until tomatoes soften.
  4. Combine cooked pasta with the tomato mixture; add lemon juice, zest, oregano, basil, salt, and pepper. Toss gently, adding reserved pasta water as needed.
  5. Fold in crumbled feta cheese and serve warm.
