2 salmon fillets
2 cups baby potatoes, halved
1 bunch asparagus, trimmed
1 tbsp olive oil
1 clove garlic, minced
1 cup shredded mozzarella cheese
1 tsp paprika
1 tsp garlic powder
Salt & pepper to taste
1 tbsp fresh parsley, chopped
1 tsp lemon juice (optional)
Instructions
Preheat oven to 400°F (200°C). Toss halved baby potatoes with olive oil, minced garlic, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
On another baking sheet, lay out trimmed asparagus. Drizzle with olive oil, season, and top with shredded cheese. Bake alongside the potatoes for the last 10 minutes.
While the vegetables roast, season salmon fillets with paprika, garlic powder, salt, and pepper. Grill over medium-high heat for 4-5 minutes per side until cooked through.
